1.5 lbs Chicken Breasts
1 cup Almond Flour
1 tablespoon Dried Dill
1 tablespoon Dried Chives
2 teaspoons Garlic Powder
2 teaspoons Onion Powder
1 tablespoon Dried Parsley
Sea Salt and Black Pepper to taste
1 large Egg
Avocado Oil Spray


Instructions

  1. Pat the chicken breasts dry with a paper towel and cut into uniform 1-inch pieces
  2. In a shallow bowl, whisk together the almond flour, dried dill, chives, garlic powder, onion powder, parsley, salt, and pepper
  3. In a separate small bowl, whisk the egg until smooth. Dip each piece of chicken into the egg wash and roll in the ranch flour mixture until fully coated
  4. Preheat the air fryer to 400°F (200°C)
  5. Place the chicken bites in a single layer in the air fryer basket, lightly spray the tops with avocado oil
  6. Air fry for 10 to 12 minutes, shaking the basket halfway through and spraying again for even browning
  7. Once the internal temperature reaches 165°F, remove them from the basket and let rest for 2 minutes before serving

Notes

Brining chicken in salt water for 30 minutes ensures juiciness.

Cook in batches if needed to avoid steaming the chicken.
