Ingredients
6 units Large Eggs
1 lb Ground Pork or Turkey Sausage
1 cup Almond Flour or Pork Rind Crumbs
1 tsp Smoked Paprika
1 tbsp Fresh Sage, finely minced
1 tbsp Fresh Thyme, finely minced
Sea Salt and Black Pepper to taste
Avocado Oil Spray as needed
1 tbsp Dijon Mustard, optional
Instructions
- Prepare soft-boiled eggs by boiling for 6-8 minutes, then plunge into ice water
- Carefully peel the cooled eggs under running water and pat dry
- In a large bowl, mix the sausage with sage, thyme, smoked paprika, salt, pepper, and mustard until well combined
- Divide the meat mixture into 6 portions, flatten each, wrap around each egg, and seal gaps
- Roll the wrapped eggs in almond flour or crushed pork rinds to coat
- Preheat air fryer to 375°F (190°C) and lightly spray the basket with avocado oil
- Arrange the eggs in the air fryer without touching and spray tops with avocado oil
- Cook for 12 to 15 minutes, shaking the basket halfway through, until golden brown and fully cooked
