Ingredients

6 units Large Eggs
1 lb Ground Pork or Turkey Sausage
1 cup Almond Flour or Pork Rind Crumbs
1 tsp Smoked Paprika
1 tbsp Fresh Sage, finely minced
1 tbsp Fresh Thyme, finely minced
Sea Salt and Black Pepper to taste
Avocado Oil Spray as needed
1 tbsp Dijon Mustard, optional


Instructions

  1. Prepare soft-boiled eggs by boiling for 6-8 minutes, then plunge into ice water
  2. Carefully peel the cooled eggs under running water and pat dry
  3. In a large bowl, mix the sausage with sage, thyme, smoked paprika, salt, pepper, and mustard until well combined
  4. Divide the meat mixture into 6 portions, flatten each, wrap around each egg, and seal gaps
  5. Roll the wrapped eggs in almond flour or crushed pork rinds to coat
  6. Preheat air fryer to 375°F (190°C) and lightly spray the basket with avocado oil
  7. Arrange the eggs in the air fryer without touching and spray tops with avocado oil
  8. Cook for 12 to 15 minutes, shaking the basket halfway through, until golden brown and fully cooked
  9. Let rest for a few minutes before slicing ope
