Description
These Air Fryer Stuffed Bell Peppers bridge the gap between high protein, low effort, and minimal cleanup, delivering flavor with less work than traditional oven methods.
Ingredients
4 units Large Bell Peppers
1 lb Lean Ground Beef or Turkey
1 cup Cooked Quinoa or Brown Rice
1/2 cup Diced Tomatoes
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 cup Shredded Grass-Fed Cheese
Sea Salt and Black Pepper to taste
Instructions
- Slice the tops off the bell peppers and remove the seeds and membranes
- Combine the ground meat, cooked grains, diced tomatoes, olive oil, and spices in a bowl and mix thoroughly
- Stuff the mixture into each pepper, pressing down gently to pack tightly
- Place the peppers in the air fryer basket. Cook at 360°F (180°C) for 10 to 12 minutes
- Open the basket and sprinkle cheese over the top of each pepper
- Increase temperature to 380°F (193°C) and cook for another 3 to 5 minutes until cheese is bubbly
- Let sit for 2 minutes before serving

You can prep ahead of time and store stuffed peppers in the fridge for up to 24 hours before air frying.
