Description

These Air Fryer Stuffed Bell Peppers bridge the gap between high protein, low effort, and minimal cleanup, delivering flavor with less work than traditional oven methods.


Ingredients

4 units Large Bell Peppers
1 lb Lean Ground Beef or Turkey
1 cup Cooked Quinoa or Brown Rice
1/2 cup Diced Tomatoes
1 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 cup Shredded Grass-Fed Cheese
Sea Salt and Black Pepper to taste


Instructions

  1. Slice the tops off the bell peppers and remove the seeds and membranes
  2. Combine the ground meat, cooked grains, diced tomatoes, olive oil, and spices in a bowl and mix thoroughly
  3. Stuff the mixture into each pepper, pressing down gently to pack tightly
  4. Place the peppers in the air fryer basket. Cook at 360°F (180°C) for 10 to 12 minutes
  5. Open the basket and sprinkle cheese over the top of each pepper
  6. Increase temperature to 380°F (193°C) and cook for another 3 to 5 minutes until cheese is bubbly
  7. Let sit for 2 minutes before serving

Notes

You can prep ahead of time and store stuffed peppers in the fridge for up to 24 hours before air frying.
