2 cups Old-Fashioned Rolled Oats
1/2 cup Walnuts, roughly chopped
2 Medium Large Apples, diced into 1/2-inch cubes
1/3 cup Maple Syrup
3 tablespoons Coconut Oil, melted
2 cups Almond Milk, unsweetened
1 Large Egg
1.5 tsp Cinnamo
1/4 tsp Nutmeg
1/2 teaspoon Sea Salt


Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8 inch baking dish with coconut oil
  2. In a bowl, combine oats, half of the chopped walnuts, cinnamon, nutmeg, and sea salt
  3. In another bowl, whisk together almond milk, maple syrup, egg, and melted coconut oil
  4. Layer diced apples at the bottom of the baking dish
  5. Pour the dry oat mixture over the apples, then drizzle the wet mixture over the top
  6. Sprinkle remaining walnuts on top and bake for 35-40 minutes until golden brow
  7. Allow to rest for 10 minutes before slicing

Notes

Use certified gluten-free oats if needed.

Consider toasting walnuts for enhanced flavor before adding.
