Ingredients
1.5 lbs Boneless Pork Chops
1/2 cup Almond Flour
1/4 cup Grated Parmesan Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Smoked Paprika
1/2 tsp Dried Italian Herbs
1/4 tsp Cayenne Pepper
Salt
Freshly Ground Black Pepper
2 Large Eggs
2 tbsp Unsweetened Almond Milk
2 tbsp Olive Oil
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
- Pat the pork chop cubes dry with paper towels and season with salt and pepper
- In a shallow bowl, mix almond flour, Parmesan cheese, garlic powder, onion powder, smoked paprika, dried Italian herbs, cayenne pepper, and salt and pepper
- In another bowl, whisk the eggs with almond milk until combined
- Dip each pork nugget into the egg wash, then coat in the flour mixture, pressing to adhere
- Place the coated nuggets on the baking sheet or a wire rack
- Drizzle with olive oil and bake for 15-20 minutes, flipping halfway, until golden brown and cooked through to an internal temperature of 145°F (63°C)
