2 cans (5 oz) Canned Tuna
2 Large Eggs
1 cup Whole Wheat Flour
½ cup Milk
2 tablespoons Olive Oil
1 teaspoon Baking Powder
1 teaspoon Dried Dill
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
¼ teaspoon Salt
¼ teaspoon Black Pepper
¼ cup Finely Grated Zucchini (optional)
¼ cup Shredded Cheddar Cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin ti
- Drain the canned tuna thoroughly and set aside
- In a large bowl, whisk together the eggs, milk, and olive oil until smooth
- In another bowl, whisk together the flour, baking powder, dill, garlic powder, onion powder, salt, and black pepper
- Combine the wet and dry ingredients, mixing gently until just combined
- Fold in the drained tuna, zucchini, and cheese, if using
- Divide the batter evenly among the muffin cups
- Bake for 18-22 minutes until golden brown and a toothpick comes out clea
- Cool in the pan for 5 minutes, then transfer to a wire rack
