Description

This BBQ Beef Curry perfectly blends the smoky, familiar comfort of a backyard barbecue with the vibrant, exotic warmth of a traditional curry, featuring tender chunks of beef slow-cooked in a rich sauce.


Ingredients

2 lbs Grass-fed Beef Chuck Roast
2 tbsp Olive Oil or Avocado Oil
1 large Yellow Onio
4 cloves Fresh Garlic
1 tbsp Fresh Ginger
2 tbsp Yellow Curry Powder
1 tsp Smoked Paprika
3 tbsp Tomato Paste
2 tbsp Honey or Maple Syrup
1 tbsp Apple Cider Vinegar
1 can (14 oz) Full-fat Coconut Milk
1 cup Beef Bone Broth
Sea Salt and Black Pepper to taste


Instructions

  1. Prepare the Beef by patting it dry and seasoning generously with salt and pepper
  2. Sear the beef in a large pot until browned on all sides, then set aside
  3. Sauté the onion in the remaining oil until translucent, then add garlic and ginger
  4. Bloom the spices by stirring in curry powder, smoked paprika, and tomato paste
  5. Create the sauce by whisking in honey, vinegar, coconut milk, and broth
  6. Return the seared beef to the pot and simmer for 1.5 to 2 hours until tender
  7. Adjust seasoning before serving and garnish with cilantro

Notes

This dish can be made in a slow cooker by following the same steps and cooking on low for 7-8 hours.
