Ingredients
2 lbs Grass-fed Beef Chuck Roast
2 tbsp Olive Oil or Avocado Oil
1 large Yellow Onio
4 cloves Fresh Garlic
1 tbsp Fresh Ginger
2 tbsp Yellow Curry Powder
1 tsp Smoked Paprika
3 tbsp Tomato Paste
2 tbsp Honey or Maple Syrup
1 tbsp Apple Cider Vinegar
1 can (14 oz) Full-fat Coconut Milk
1 cup Beef Bone Broth
Sea Salt and Black Pepper to taste
Instructions
- Prepare the Beef by patting it dry and seasoning generously with salt and pepper
- Sear the beef in a large pot until browned on all sides, then set aside
- Sauté the onion in the remaining oil until translucent, then add garlic and ginger
- Bloom the spices by stirring in curry powder, smoked paprika, and tomato paste
- Create the sauce by whisking in honey, vinegar, coconut milk, and broth
- Return the seared beef to the pot and simmer for 1.5 to 2 hours until tender
- Adjust seasoning before serving and garnish with cilantro
