Ingredients
1.5 lbs Boneless Skinless Chicken Breasts
1 cup Homemade BBQ Sauce (Honey-based)
4 cups Shredded Purple and Green Cabbage
1 cup Grated Carrots
1/2 cup Avocado Oil Mayonnaise
2 tablespoons Apple Cider Vinegar
1 tablespoon Raw Honey or Maple Syrup
6–8 count Whole Grain Tortillas or Large Lettuce Leaves
1 tablespoon Extra Virgin Olive Oil
Sea Salt and Black Pepper to taste
Instructions
- Pat the chicken breasts dry and season with sea salt and black pepper. Sear in olive oil over medium-high heat for 6-7 minutes per side until golden brown. Let rest, then shred
- Mix shredded chicken with BBQ sauce in a bowl
- In another bowl, combine shredded cabbage and carrots. Whisk mayo, vinegar, honey, and salt in a jar. Toss the dressing with the cabbage mixture
- Warm the tortillas in a skillet for 30 seconds on each side
- Assemble by placing BBQ chicken and coleslaw in the center of a tortilla, then roll tightly
- Enjoy while warm
