3 Large Sweet Potatoes
2 Tablespoons Avocado Oil
1/3 Cup Buffalo Sauce
1 Tablespoon Maple Syrup
1 Teaspoon Garlic Powder
1/2 Teaspoon Smoked Paprika

Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper
- Cut your sweet potatoes into uniform 1/2-inch cubes
- In a large mixing bowl, toss the potato cubes with avocado oil, garlic powder, smoked paprika, and sea salt. Spread them in a single layer on the baking sheet
- Roast for 20-25 minutes, flipping halfway through
- While the potatoes roast, whisk together the buffalo sauce and maple syrup in a small bowl
- Remove the potatoes from the oven, transfer them back to the mixing bowl, pour the buffalo mixture over them, and toss gently to coat
- Return the coated Buffalo Sweet Potato Bites to the oven for another 5 minutes
