Description

Delightful Cheesy Blueberry Bars with a buttery, crumbly crust and a creamy, tangy filling studded with juicy blueberries.


Ingredients

2 cups All-purpose flour
1 cup Rolled oats
1 cup Cold unsalted butter
¼ cup Maple syrup or honey
½ teaspoon Sea salt
2 (8-ounce) blocks Cream cheese
½ cup Maple syrup or honey
2 Large eggs
1 teaspoon Pure vanilla extract
1 teaspoon Lemon zest
2 cups Fresh blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper
  2. In a large bowl, mix flour, oats, and salt. Cut in the cold butter and sweetener until crumbly
  3. Press two-thirds of the mixture into the bottom of the prepared pan. Pre-bake for 10-12 minutes
  4. In another bowl, beat cream cheese until smooth, then add sweetener and eggs one at a time
  5. Mix in vanilla and lemon zest, then fold in blueberries
  6. Pour filling over the crust and sprinkle remaining crumble on top
  7. Bake for 30-35 minutes until set, then cool at room temperature and refrigerate for at least 3-4 hours before slicing

Notes

Use frozen blueberries if needed, tossing them with flour to prevent sinking.
