4 Thick-Cut Pork Chops
2 tablespoons Avocado Oil
1 cup Sharp Cheddar Cheese
1/2 cup Heavy Cream
3 cloves Garlic
1 teaspoon Smoked Paprika
Fresh Thyme
Fresh Parsley

Instructions

  1. Take pork chops out of the refrigerator 20 minutes before cooking. Pat them completely dry with a paper towel and season both sides generously with salt, pepper, and smoked paprika
  2. Heat the Avocado Oil in a large skillet over medium-high heat. Once shimmering, place the chops in the pan and cook for 4-5 minutes per side until a golden crust forms. Remove chops and set aside
  3. Lower heat to medium, add minced garlic to the same skillet. Sauté until fragrant, scraping up browned bits
  4. Pour in heavy cream and bring to a gentle simmer, whisking constantly
  5. Turn heat to low, gradually stir in freshly grated cheddar cheese until the sauce is thick, glossy, and smooth
  6. Nestle the seared pork chops back into the skillet, spoon sauce over them and simmer for another 2-3 minutes until pork reaches an internal temperature of 145°F
  7. Garnish with fresh parsley and thyme, and let rest in the pan for 5 minutes before serving

Notes

Use a meat thermometer to avoid overcooking the pork.

Store leftovers in an airtight container in the refrigerator for up to three days.

Reheat on stovetop over low heat with a splash of broth or cream to loosen the sauce.
