1 pound Dry Pasta
2 large Sweet Potatoes
2 tablespoons Olive Oil
3 cloves Garlic
4 tablespoons Unsalted Butter
1/4 cup All-Purpose Flour
4 cups Whole Milk
2 cups Cheddar Cheese
1 cup Gruyere or Fontina Cheese
1 teaspoon Dijon Mustard
1/2 teaspoon Smoked Paprika
Pinch Nutmeg
Salt to taste
Black Pepper to taste
1/2 cup Panko Breadcrumbs (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Peel the sweet potatoes and cut them into 1-inch cubes. Toss them with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until fork-tender
  2. While the sweet potatoes roast, bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente, then drain, reserving 1 cup of pasta water
  3. In a large pot, melt butter over medium heat. Add minced garlic and cook for about 1 minute until fragrant
  4. Whisk in flour and cook, stirring continuously, to form a roux for about 1-2 minutes
  5. Slowly add milk, one cup at a time, whisking continuously until the sauce is thickened and smooth
  6. Reduce heat and stir in cheddar, Gruyere, mustard, paprika, and nutmeg until melted and smooth. Season with salt and pepper
  7. Incorporate the pureed sweet potato into the cheese sauce. If needed, add reserved pasta water until the desired consistency is reached
  8. Combine pasta and sauce, stirring gently to coat all pasta
  9. If baking, transfer to a dish, top with panko, and bake at 375°F (190°C) for 15-20 minutes until golden and bubbly
