Ingredients
1.5 lbs Chicken Breast
4 cups Broccoli Florets
1 cup Greek Yogurt (Plain)
1.5 cups Cheddar Cheese
2 tablespoons Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Black Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish with a small amount of Avocado Oil
- Cut the chicken breasts into even 1-inch cubes and season with salt, pepper, and Olive Oil
- Quickly steam the broccoli florets for 2 minutes until bright green and slightly firm
- In a medium bowl, whisk together Greek yogurt, garlic powder, onion powder, and half of the cheddar cheese. Add water or bone broth if too thick
- Combine the chicken and broccoli in the baking dish. Pour the yogurt mixture over the top and toss to coat
- Sprinkle the remaining cheddar cheese over the top and bake for 25 to 30 minutes until chicken reaches 165°F
- Optionally broil for 2 minutes for a golden-brown top, watching closely
- Let the dish sit for 5 minutes before serving
