Ingredients

1.5 lbs Chicken Breast
4 cups Broccoli Florets
1 cup Greek Yogurt (Plain)
1.5 cups Cheddar Cheese
2 tablespoons Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Black Pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish with a small amount of Avocado Oil
  2. Cut the chicken breasts into even 1-inch cubes and season with salt, pepper, and Olive Oil
  3. Quickly steam the broccoli florets for 2 minutes until bright green and slightly firm
  4. In a medium bowl, whisk together Greek yogurt, garlic powder, onion powder, and half of the cheddar cheese. Add water or bone broth if too thick
  5. Combine the chicken and broccoli in the baking dish. Pour the yogurt mixture over the top and toss to coat
  6. Sprinkle the remaining cheddar cheese over the top and bake for 25 to 30 minutes until chicken reaches 165°F
  7. Optionally broil for 2 minutes for a golden-brown top, watching closely
  8. Let the dish sit for 5 minutes before serving

Ensure broccoli is dry after steaming to avoid a watery casserole.

Cut chicken into uniform pieces for even cooking.

Use room temperature yogurt to prevent curdling.
