Description

A quick and delicious Chicken Caesar Wrap that combines seared chicken, fresh romaine, and a creamy homemade dressing, perfect for busy weeknights or picnics.


Ingredients

2 large Chicken Breasts
4 large Whole Grain or Gluten-Free Tortillas
3 cups Fresh Romaine Lettuce, chopped
1/4 cup Shaved Parmesan Cheese
1/2 cup Avocado Oil Mayo
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic, minced
1 teaspoon Dijon Mustard
1 tablespoon Fresh Lemon Juice
1 teaspoon Honey
Sea Salt to taste
Freshly Cracked Black Pepper to taste


Instructions

  1. Season chicken breast strips with sea salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown. Set aside to rest before slicing
  2. In a small bowl, whisk together avocado oil mayo, extra virgin olive oil, minced garlic, Dijon mustard, lemon juice, and honey until smooth
  3. In a large bowl, toss chopped romaine lettuce and shaved parmesan cheese with half of the dressing
  4. Warm the tortillas in a dry skillet for about 30 seconds on each side to make them pliable
  5. Assemble the wrap by laying a tortilla flat, adding a handful of dressed romaine, seared chicken pieces, and extra dressing if desired. Fold the sides inward and roll from the bottom up tightly
  6. Slice the wrap in half diagonally for serving

Notes

Make sure your romaine is dry after washing to prevent sogginess.

For extra creaminess, use an immersion blender for the dressing.

Toast the wrapped wrap in a skillet for added crunch.
