Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and prepare a 9×5-inch loaf pa
  2. Place the rolled oats into a high-speed blender or food processor and pulse until they reach a fine, flour-like consistency
  3. In a mixing bowl, mash the three overripe bananas until mostly smooth, leaving a few small lumps
  4. Add the eggs, maple syrup, avocado oil, and vanilla extract to the mashed bananas, and whisk until well combined
  5. In another bowl, whisk together the oat flour, baking soda, cinnamon, and sea salt
  6. Gradually fold the dry ingredients into the wet mixture using a spatula
  7. Gently stir in the dark chocolate chips and reserve a few for topping the batter
  8. Pour the batter into the prepared loaf pan and bake for 45 to 55 minutes, or until a toothpick comes out clea
  9. Allow to cool in the pan for 10 minutes before transferring it to a wire rack
