2 teaspoons Ground Cinnamo
1/2 teaspoon Ground Nutmeg
1/2 teaspoon Salt
2 Large Eggs
1/2 cup Unsweetened Apple Sauce
1/2 cup Maple Syrup
1/4 cup Coconut Oil
1/2 cup Unsweetened Almond Milk
1 teaspoon Vanilla Extract
1 1/2 cups Apples


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin ti
  2. In a large mixing bowl, whisk together the whole wheat pastry flour, baking powder, ground cinnamon, ground nutmeg, and salt
  3. In another bowl, whisk together the eggs, unsweetened apple sauce, maple syrup, melted coconut oil, almond milk, and vanilla extract until smooth
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined
  5. Fold in the finely diced apples carefully
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full
  7. Bake for 18-22 minutes, or until a toothpick comes out clea
  8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely

Notes

Use room temperature ingredients for better mixing.
