Clean Hummus Roll-Ups are incredibly fresh, creamy, and crunchy snacks made with wholesome ingredients. Perfect for a quick family lunch or as an appetizer for gatherings.
Ingredients
4 large Whole Grain or Gluten-Free Wraps
2 cups Cooked Chickpeas
1/4 cup Tahini
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
2 cloves Garlic, minced
1 medium Cucumber, julienned
1 large Red Bell Pepper, sliced thinly
2 cups Fresh Spinach
Sea Salt and Pepper, to taste
Instructions
- Prepare the Hummus: Place chickpeas, tahini, Olive Oil, lemon juice, garlic, and salt in a food processor. Blend until smooth. Add water if needed for desired consistency
- Prep the Vegetables: Wash and dry produce. Slice cucumber and bell pepper into thin strips
- Assemble the Wraps: Lay a wrap flat and spread about 3 tablespoons of hummus evenly across the surface
- Layer the Fillings: Add spinach, cucumber, and red bell pepper on top of the hummus
- Roll and Secure: Roll the wrap tightly from the bottom edge, pressing firmly as you go
- Slice and Serve: Cut each roll into 1-inch rounds
Notes
Make sure vegetables are dry to avoid sogginess.
Warm wraps slightly if they are stiff before assembling.
Chill the completed roll-ups for easier slicing.
