These Cozy Chicken Breast Carnitas bring all the traditional flavors of a Mexican feast to your table with a healthy, lean twist. Each bite offers a vibrant explosion of fresh lime, citrus, and aromatic spices, while skipping the heavy lard and using clean ingredients.
Ingredients
2 lbs Chicken Breasts
3 tbsp Avocado Oil
1/2 cup Fresh Orange Juice
1/4 cup Fresh Lime Juice
4–5 large Garlic Cloves
1 tbsp Ground Cumi
1 tsp Dried Oregano
1 tsp Smoked Paprika
1 tsp Sea Salt
1/2 tsp Black Pepper
1 tbsp Honey or Maple Syrup
Instructions
- Pat chicken breasts dry and cut into large chunks
- Whisk together cumin, oregano, smoked paprika, salt, pepper, and minced garlic. Rub mixture over chicke
- Heat 2 tablespoons of avocado oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes each side
- Add orange juice, lime juice, and honey/maple syrup. Simmer covered for 15-20 minutes
- Shred the chicken using two forks
- Wipe the skillet, add remaining avocado oil, and crisp shredded chicken in a single layer for 3-5 minutes
- Garnish with cilantro and lime juice before serving
Notes
Let chicken rest for 5 minutes after simmering before shredding for better moisture.
