Description

These Cozy Chicken Breast Carnitas bring all the traditional flavors of a Mexican feast to your table with a healthy, lean twist. Each bite offers a vibrant explosion of fresh lime, citrus, and aromatic spices, while skipping the heavy lard and using clean ingredients.


Ingredients

2 lbs Chicken Breasts
3 tbsp Avocado Oil
1/2 cup Fresh Orange Juice
1/4 cup Fresh Lime Juice
45 large Garlic Cloves
1 tbsp Ground Cumi
1 tsp Dried Oregano
1 tsp Smoked Paprika
1 tsp Sea Salt
1/2 tsp Black Pepper
1 tbsp Honey or Maple Syrup


Instructions

  1. Pat chicken breasts dry and cut into large chunks
  2. Whisk together cumin, oregano, smoked paprika, salt, pepper, and minced garlic. Rub mixture over chicke
  3. Heat 2 tablespoons of avocado oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes each side
  4. Add orange juice, lime juice, and honey/maple syrup. Simmer covered for 15-20 minutes
  5. Shred the chicken using two forks
  6. Wipe the skillet, add remaining avocado oil, and crisp shredded chicken in a single layer for 3-5 minutes
  7. Garnish with cilantro and lime juice before serving

Notes

Let chicken rest for 5 minutes after simmering before shredding for better moisture.
