Creamy Cucumber Stir Fry is a delightful dish that combines crisp cucumbers and a rich, savory sauce, making it a perfect meal for busy weeknights or special occasions.


Ingredients

3 medium English Cucumbers, thinly sliced (about 1/4 inch thick)
1 lb Boneless, Skinless Chicken Breast or Thighs (or firm tofu), cut into bite-sized pieces
2 tablespoons Avocado Oil or Olive Oil
4 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
1 can (13.5 oz) Full-Fat Coconut Milk
1/2 cup Chicken or Vegetable Broth
1 tablespoon Arrowroot Starch or Cornstarch, mixed with 2 tablespoons cold water (slurry)
3 tablespoons Tamari or Coconut Aminos
1 tablespoon Rice Vinegar
12 teaspoons Maple Syrup or Honey, adjust to taste
1 tablespoon Fresh Lime Juice
1/2 teaspoon Red Pepper Flakes (optional, for a kick)
1/4 cup Fresh Cilantro, chopped (for garnish)
1 tablespoon Toasted Sesame Seeds (for garnish)


Instructions

  1. Prepare your ingredients: thinly slice the cucumbers, cut chicken (or tofu), mince garlic, and grate ginger. Whisk together the tamari, rice vinegar, maple syrup, lime juice, and red pepper flakes for the sauce
  2. Heat 1 tablespoon of oil in a large skillet or wok and sear chicken for 3-5 minutes. Remove and set aside
  3. In the same skillet, reduce heat and add remaining oil, garlic, and ginger. Sauté for 1 minute
  4. Pour in coconut milk and broth, bringing to a simmer. Whisk in the sauce mixture and simmer for 2-3 minutes
  5. Add slurry to thicken the sauce, stirring until it reaches the desired consistency
  6. Return the cooked chicken (or tofu) and cucumbers to the skillet, stirring gently. Cook for 2-3 minutes until cucumbers are heated through but still crisp
  7. Serve immediately, garnished with cilantro and sesame seeds

Notes

Cucumbers should be added at the end to maintain their crispness.
