Creamy Cucumber Stir Fry is a delightful dish that combines crisp cucumbers and a rich, savory sauce, making it a perfect meal for busy weeknights or special occasions.
Ingredients
3 medium English Cucumbers, thinly sliced (about 1/4 inch thick)
1 lb Boneless, Skinless Chicken Breast or Thighs (or firm tofu), cut into bite-sized pieces
2 tablespoons Avocado Oil or Olive Oil
4 cloves Garlic, minced
1 tablespoon Fresh Ginger, grated
1 can (13.5 oz) Full-Fat Coconut Milk
1/2 cup Chicken or Vegetable Broth
1 tablespoon Arrowroot Starch or Cornstarch, mixed with 2 tablespoons cold water (slurry)
3 tablespoons Tamari or Coconut Aminos
1 tablespoon Rice Vinegar
1–2 teaspoons Maple Syrup or Honey, adjust to taste
1 tablespoon Fresh Lime Juice
1/2 teaspoon Red Pepper Flakes (optional, for a kick)
1/4 cup Fresh Cilantro, chopped (for garnish)
1 tablespoon Toasted Sesame Seeds (for garnish)
Instructions
- Prepare your ingredients: thinly slice the cucumbers, cut chicken (or tofu), mince garlic, and grate ginger. Whisk together the tamari, rice vinegar, maple syrup, lime juice, and red pepper flakes for the sauce
- Heat 1 tablespoon of oil in a large skillet or wok and sear chicken for 3-5 minutes. Remove and set aside
- In the same skillet, reduce heat and add remaining oil, garlic, and ginger. Sauté for 1 minute
- Pour in coconut milk and broth, bringing to a simmer. Whisk in the sauce mixture and simmer for 2-3 minutes
- Add slurry to thicken the sauce, stirring until it reaches the desired consistency
- Return the cooked chicken (or tofu) and cucumbers to the skillet, stirring gently. Cook for 2-3 minutes until cucumbers are heated through but still crisp
- Serve immediately, garnished with cilantro and sesame seeds
Notes
Cucumbers should be added at the end to maintain their crispness.
