Ingredients
2 Medium Fresh Zucchini
1 cup Almond Flour or Panko
1/2 cup Grated Parmesan Cheese
2 Large Pasture-Raised Eggs
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Black Pepper to Taste
Avocado Oil Spray for Coating
Instructions
- Wash the zucchini thoroughly and pat them bone-dry. Cut into uniform batons, roughly 3 inches long and 1/2 inch thick
- Organize three shallow bowls: one with almond flour, one with whisked eggs, and the third with breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper
- Dip each zucchini baton first into almond flour, then into the egg wash, and finally press it into the breadcrumb mixture
- Preheat the air fryer to 400°F (200°C)
- Place the coated fries in a single layer in the air fryer basket. Lightly mist with avocado oil spray
- Cook for 8 to 10 minutes, shaking the basket halfway through to ensure even browning
- Serve immediately while hot
Notes
To prevent sogginess, sprinkle the sliced zucchini with salt and let it sit on paper towels for 10 minutes before breading.
