2 Medium Fresh Zucchini
1 cup Almond Flour or Panko
1/2 cup Grated Parmesan Cheese
2 Large Pasture-Raised Eggs
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
Sea Salt & Black Pepper to Taste
Avocado Oil Spray for Coating


Instructions

  1. Wash the zucchini thoroughly and pat them bone-dry. Cut into uniform batons, roughly 3 inches long and 1/2 inch thick
  2. Organize three shallow bowls: one with almond flour, one with whisked eggs, and the third with breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper
  3. Dip each zucchini baton first into almond flour, then into the egg wash, and finally press it into the breadcrumb mixture
  4. Preheat the air fryer to 400°F (200°C)
  5. Place the coated fries in a single layer in the air fryer basket. Lightly mist with avocado oil spray
  6. Cook for 8 to 10 minutes, shaking the basket halfway through to ensure even browning
  7. Serve immediately while hot

Notes

To prevent sogginess, sprinkle the sliced zucchini with salt and let it sit on paper towels for 10 minutes before breading.
