3 medium Zucchini
2 tablespoons Olive Oil
1 teaspoon Paprika

1 pound Elbow Macaroni
4 tablespoons unsalted Butter
1/4 cup All-Purpose Flour
3 cups Whole Milk
1 teaspoon Dijon Mustard
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/4 teaspoon Nutmeg
Salt to taste
Black Pepper to taste
8 ounces sharp Cheddar Cheese
4 ounces Gruyère Cheese

Instructions
- Preheat your oven to 400°F (200°C)
- Wash and prepare the zucchini, then toss with olive oil, paprika, garlic powder, salt, and pepper. Roast until tender-crisp
- Cook the macaroni until al dente and set aside
- In a pot, make a roux with melted butter and flour, then add warmed milk gradually until the sauce thickens. Stir in cheeses

- Transfer to a baking dish, top with breadcrumbs and remaining zucchini, then bake until bubbly and crispy
