1.52 lbs Boneless Skinless Chicken Breasts
3 Large Bell Peppers
1 Large Red Onio
2 tablespoons Avocado Oil
2 tablespoons Fresh Lime Juice
1 tablespoon Chili Powder
1 teaspoon Ground Cumi
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
Sea Salt & Black Pepper to taste
1/4 cup Fresh Cilantro


Instructions

  1. Slice your red onion and bell peppers into thin, uniform strips and place in the bottom of the slow cooker
  2. Slice the chicken breasts into long strips. Whisk together avocado oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Coat chicken in this mixture
  3. Layer the seasoned chicken on top of the vegetables in the crockpot. Cover and cook on LOW for 3 to 4 hours or on HIGH for 1.5 to 2 hours
  4. Once cooked, remove the lid, toss gently, and sprinkle with fresh cilantro. Serve with a slotted spoo
