Ingredients
1.5 – 2 lbs Boneless Skinless Chicken Breasts
3 Large Bell Peppers
1 Large Red Onio
2 tablespoons Avocado Oil
2 tablespoons Fresh Lime Juice
1 tablespoon Chili Powder
1 teaspoon Ground Cumi
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
Sea Salt & Black Pepper to taste
1/4 cup Fresh Cilantro
Instructions
- Slice your red onion and bell peppers into thin, uniform strips and place in the bottom of the slow cooker
- Slice the chicken breasts into long strips. Whisk together avocado oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Coat chicken in this mixture
- Layer the seasoned chicken on top of the vegetables in the crockpot. Cover and cook on LOW for 3 to 4 hours or on HIGH for 1.5 to 2 hours
- Once cooked, remove the lid, toss gently, and sprinkle with fresh cilantro. Serve with a slotted spoo
