Description

1.5 lbs Grass-Fed Ground Beef
4 cups Yukon Gold Potatoes
1 cup Carrots
1 medium Yellow Onio
3 cloves Garlic Cloves
4 cups Beef Bone Broth
1 tbsp Olive Oil
1 tsp Dried Thyme
1 tsp Dried Oregano
1/2 cup Full-Fat Coconut Milk
Sea Salt to taste
Black Pepper to taste


Instructions

  1. Heat the Olive Oil in a large skillet over medium-high heat. Add the ground beef and cook until browned. In the last few minutes, add the onions and garlic
  2. Transfer the beef mixture to the crockpot, leaving excess fat behind. Add the diced potatoes, sliced carrots, and dried herbs
  3. Pour the beef bone broth over the top
  4. Set the crockpot to 'Low' for 6 to 8 hours or 'High' for 3 to 4 hours
  5. About 30 minutes before serving, stir in the coconut milk
  6. Season with sea salt and black pepper to taste before serving

Notes

For a dairy-free version, use full-fat coconut milk or cashew-based cream instead of heavy cream.

Substitute ground beef with ground turkey or bison for a leaner option.

If the soup turns out thin, mash a few cooked potatoes to thicken the soup.
