Ingredients
1.5 lbs Grass-Fed Ground Beef
4 cups Yukon Gold Potatoes
1 cup Carrots
1 medium Yellow Onio
3 cloves Garlic Cloves
4 cups Beef Bone Broth
1 tbsp Olive Oil
1 tsp Dried Thyme
1 tsp Dried Oregano
1/2 cup Full-Fat Coconut Milk
Sea Salt to taste
Black Pepper to taste
Instructions
- Heat the Olive Oil in a large skillet over medium-high heat. Add the ground beef and cook until browned. In the last few minutes, add the onions and garlic
- Transfer the beef mixture to the crockpot, leaving excess fat behind. Add the diced potatoes, sliced carrots, and dried herbs
- Pour the beef bone broth over the top
- Set the crockpot to 'Low' for 6 to 8 hours or 'High' for 3 to 4 hours
- About 30 minutes before serving, stir in the coconut milk
- Season with sea salt and black pepper to taste before serving
Notes
For a dairy-free version, use full-fat coconut milk or cashew-based cream instead of heavy cream.
Substitute ground beef with ground turkey or bison for a leaner option.
If the soup turns out thin, mash a few cooked potatoes to thicken the soup.
