Ingredients

2 medium-sized Zucchini
2 tablespoons Olive Oil
1/2 cup Almond Flour
1/2 cup Parmesan Cheese
1 teaspoon Garlic Powder
1/2 teaspoon Smoked Paprika
Sea Salt and Black Pepper to taste


Instructions

  1. Wash the zucchinis and slice them into rounds about 1/8-inch thick
  2. Lay the slices on a paper towel, sprinkle with sea salt, and let sit for about 10 minutes. Pat dry firmly
  3. Whisk together almond flour, Parmesan cheese, garlic powder, and smoked paprika in a shallow bowl. Pour Olive Oil into a separate small bowl
  4. Preheat the oven to 400°F (200°C). Dip each zucchini slice in Olive Oil, then dredge through the flour and cheese mixture
  5. Place the coated slices on a parchment-lined baking sheet in a single layer
  6. Bake for 15 to 20 minutes, flipping halfway through until golden brow

Notes

For a vegan version, substitute Parmesan cheese with nutritional yeast.

To restore crispiness when reheating, use an oven or air fryer instead of a microwave.
