Ingredients
5 cups Fresh Peaches, sliced
1/4 cup Maple Syrup
2 tbsp Lemon Juice
1 tsp Ceylon Cinnamo
2 tbsp Tapioca Starch or Arrowroot Powder
1 cup Almond Flour or Oat Flour
1 tsp Baking Powder
1/4 tsp Sea Salt
1/4 cup Coconut Oil, melted
1 tsp Vanilla Extract
Instructions
- Preheat your oven to 375°F (190°C). Slice your fresh peaches into uniform wedges and toss them with maple syrup, lemon juice, cinnamon, and tapioca starch
- Pour the peach mixture into a ceramic or glass baking dish
- In a separate bowl, whisk together your flour, baking powder, and a pinch of salt. Add in the melted coconut oil, vanilla extract, and a touch more maple syrup. Stir until a soft, crumbly dough forms
- Drop small dollops of the dough over the top of the peaches
- Bake for 35 to 45 minutes until the topping is deep golden-brown and the peach filling is bubbling
- Let it cool for at least 15 minutes before serving
Notes
For a crispier topping, sprinkle coconut sugar on top before baking.
Use ripe peaches for the best results.
