Description

Dairy-Free Homemade Pineapple Popsicles capture the essence of a sun-drenched island, blending the natural sweetness of ripe fruit with a velvety texture, free from heavy cream and refined sugars.


Ingredients

Scale

3 cups Fresh Pineapple Chunks
1 cup Full-Fat Coconut Milk
23 tablespoons Maple Syrup or Honey
1 tablespoon Fresh Lime Juice
1 pinch Sea Salt
1/2 teaspoon Pure Vanilla Extract


Instructions

  1. Prepare the pineapple by peeling, coring, and cutting the flesh into uniform cubes
  2. Chill the pineapple chunks in the refrigerator for an hour before blending
  3. Blend the pineapple chunks, full-fat coconut milk, maple syrup, lime juice, sea salt, and vanilla extract until smooth
  4. Taste and adjust sweetness as needed, adding more honey if necessary
  5. Optionally strain the mixture through a fine-mesh sieve
  6. Pour the mixture into popsicle molds, leaving a quarter-inch of space at the top
  7. Insert sticks and freeze for at least 6 to 8 hours, preferably overnight
  8. To unmold, run the outside of the mold under lukewarm water for 10-15 seconds

Notes

For a roasted variation, roast the pineapple chunks before blending.

Wrap each popsicle in parchment paper for storage to prevent sticking.
