Description
Dairy-Free Homemade Pineapple Popsicles capture the essence of a sun-drenched island, blending the natural sweetness of ripe fruit with a velvety texture, free from heavy cream and refined sugars.
Ingredients
3 cups Fresh Pineapple Chunks
1 cup Full-Fat Coconut Milk
2–3 tablespoons Maple Syrup or Honey
1 tablespoon Fresh Lime Juice
1 pinch Sea Salt
1/2 teaspoon Pure Vanilla Extract
Instructions
- Prepare the pineapple by peeling, coring, and cutting the flesh into uniform cubes
- Chill the pineapple chunks in the refrigerator for an hour before blending
- Blend the pineapple chunks, full-fat coconut milk, maple syrup, lime juice, sea salt, and vanilla extract until smooth
- Taste and adjust sweetness as needed, adding more honey if necessary
- Optionally strain the mixture through a fine-mesh sieve
- Pour the mixture into popsicle molds, leaving a quarter-inch of space at the top
- Insert sticks and freeze for at least 6 to 8 hours, preferably overnight
- To unmold, run the outside of the mold under lukewarm water for 10-15 seconds
Notes
For a roasted variation, roast the pineapple chunks before blending.
Wrap each popsicle in parchment paper for storage to prevent sticking.
