Description

Dairy-Free Meatball Stew is a comforting meal featuring tender meatballs and a rich, flavorful broth packed with vegetables.


Ingredients

1.5 lbs Ground Grass-Fed Beef or Turkey
1/2 cup Almond Flour
1 Large Egg
2 tablespoons Fresh Parsley, chopped
3 tablespoons Olive Oil or Avocado Oil
1 Medium Yellow Onion, diced
3 Large Carrots, sliced into rounds
2 Stalks Celery, chopped
2 cups Yukon Gold Potatoes, cubed
4 cups Beef or Vegetable Bone Broth
1 teaspoon Dried Thyme
1 teaspoon Dried Rosemary
1 teaspoon Honey or Maple Syrup (optional)


Instructions

  1. In a large mixing bowl, combine ground meat, almond flour, egg, chopped parsley, salt, and pepper. Mix gently and form into small balls
  2. Heat olive oil in a pot over medium heat, sear the meatballs until golden brown, then remove them
  3. Sauté onions, carrots, and celery in the same pot for 5-7 minutes until onions are translucent
  4. Deglaze the pot with bone broth, add potatoes, thyme, rosemary, and honey. Bring to a gentle boil
  5. Return seared meatballs to the pot, reduce heat to low, cover and simmer for 20-25 minutes until potatoes are fork-tender

Notes

For a thicker consistency, mash some potato chunks into the broth.

This stew freezes well; store in airtight containers for up to 3 months.
