Ingredients
2 English or Persian Cucumbers
2 Hass Avocados
1 medium Red Onio
1/4 cup Fresh Cilantro
1/4 cup Fresh Parsley
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Fresh Lime Juice
1 teaspoon Raw Honey or Maple Syrup (optional)
Sea Salt to taste
Cracked Black Pepper to taste
Instructions
- Wash the cucumbers thoroughly and slice them into half-moons about a quarter-inch thick
- Thinly slice the red onion into translucent slivers and soak them in cold water for 5 minutes, then drai
- In a small bowl, whisk together olive oil, lime juice, salt, black pepper, and honey until emulsified
- Just before serving, cut the avocado into cubes to prevent oxidatio
- Combine cucumbers, onions, and herbs in a mixing bowl, pour the vinaigrette over, and toss gently. Then fold in the avocado carefully without mashing it
