Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats
  2. In a medium bowl, combine the flour, 1 tablespoon of ground cinnamon, baking soda, and sea salt. Whisk thoroughly
  3. In a large bowl, cream together the solid refined coconut oil and pure maple syrup until light and fluffy
  4. Beat in the large egg and stir in the pure vanilla extract until the mixture is smooth
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined
  6. Chill the dough in the refrigerator for at least 30 minutes
  7. Combine the monk fruit sweetener and ground cinnamon for the coating in a small bowl
  8. Scoop the chilled dough, roll into balls, and coat in the cinnamon-monk fruit mixture
  9. Place dough balls on prepared baking sheets about 2 inches apart and bake for 9-11 minutes
  10. Let cool for 5 minutes on the baking sheets before transferring to a wire rack

Notes

For a gluten-free version, use a high-quality 1-to-1 gluten-free baking blend.

For a vegan adaptation, replace the egg with a flax egg and use a vegan butter alternative.
