Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats
- In a medium bowl, combine the flour, 1 tablespoon of ground cinnamon, baking soda, and sea salt. Whisk thoroughly
- In a large bowl, cream together the solid refined coconut oil and pure maple syrup until light and fluffy
- Beat in the large egg and stir in the pure vanilla extract until the mixture is smooth

- Chill the dough in the refrigerator for at least 30 minutes
- Combine the monk fruit sweetener and ground cinnamon for the coating in a small bowl
- Scoop the chilled dough, roll into balls, and coat in the cinnamon-monk fruit mixture
- Place dough balls on prepared baking sheets about 2 inches apart and bake for 9-11 minutes
- Let cool for 5 minutes on the baking sheets before transferring to a wire rack
