This Easy Sugar-Free Southern Peach Cobbler brings all the nostalgic, soul-warming comfort of a classic dessert without any of the sugar-crash guilt, featuring fresh peaches and a delightful crunchy topping.

68 Large Peaches Fresh Sliced (Peeled or Unpeeled)
3/4 Cup Monk Fruit Sweetener or Maple Syrup
2 Tablespoons Arrowroot Powder or Tapioca Starch
1 Teaspoon Ground Cinnamo
1 Tablespoon Fresh Lemon Juice
1.5 Cups Almond Flour or Oat Flour
1/2 Cup Melted Coconut Oil or Grass-Fed Butter
1 Teaspoon Baking Powder
1/2 Cup Unsweetened Almond Milk
1 Teaspoon Pure Vanilla Extract


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with coconut oil
  2. Slice the fresh peaches into thick wedges and toss them with half of the monk fruit sweetener, lemon juice, cinnamon, and arrowroot powder
  3. Sauté the peach mixture in a pan over medium heat for 3-5 minutes until the juice thickens, then pour it into the prepared baking dish
  4. In a separate bowl, whisk together the flour, baking powder, and remaining sweetener, then incorporate the melted coconut oil, almond milk, and vanilla extract until a soft dough forms
  5. Drop spoonfuls of the dough over the peaches and bake for 35-45 minutes until the crust is golden brown and the fruit is bubbly
  6. Let the cobbler cool for 15 minutes before serving

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.
