Ingredients
6–8 Large Peaches Fresh Sliced (Peeled or Unpeeled)
3/4 Cup Monk Fruit Sweetener or Maple Syrup
2 Tablespoons Arrowroot Powder or Tapioca Starch
1 Teaspoon Ground Cinnamo
1 Tablespoon Fresh Lemon Juice
1.5 Cups Almond Flour or Oat Flour
1/2 Cup Melted Coconut Oil or Grass-Fed Butter
1 Teaspoon Baking Powder
1/2 Cup Unsweetened Almond Milk
1 Teaspoon Pure Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with coconut oil
- Slice the fresh peaches into thick wedges and toss them with half of the monk fruit sweetener, lemon juice, cinnamon, and arrowroot powder
- Sauté the peach mixture in a pan over medium heat for 3-5 minutes until the juice thickens, then pour it into the prepared baking dish
- In a separate bowl, whisk together the flour, baking powder, and remaining sweetener, then incorporate the melted coconut oil, almond milk, and vanilla extract until a soft dough forms
- Drop spoonfuls of the dough over the peaches and bake for 35-45 minutes until the crust is golden brown and the fruit is bubbly
- Let the cobbler cool for 15 minutes before serving

Store leftovers in an airtight container in the refrigerator for up to 4 days.
