Ingredients
1.5 cups Zucchini (finely shredded)
1 cup Almond Butter (creamy)
1/2 cup Maple Syrup (pure)
1/2 cup Raw Cacao Powder
1 large Egg (room temperature)
1 tsp Vanilla Extract
1 tsp Baking Soda
1/4 tsp Sea Salt
1/2 cup Dark Chocolate Chips (70% or higher)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper
- Shred the zucchini using the fine side of a grater without squeezing out the moisture
- In a large mixing bowl, combine the almond butter, maple syrup, egg, and vanilla extract, and whisk until smooth
- Sift in the raw cacao powder, baking soda, and sea salt, stirring gently until no large clumps remai
- Fold in the shredded zucchini and half of the dark chocolate chips into the batter using a spatula
- Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining chocolate chips over the surface
- Bake for 25 to 30 minutes until a toothpick inserted into the center comes out with just a few moist crumbs
- Allow the brownies to cool completely in the pan. For the best texture, chill in the refrigerator for an hour before slicing

Store the brownies in an airtight container in the refrigerator for up to five days.
To enjoy warm, reheat in the oven at 300°F for about 5 minutes.
