Description

These Gluten Free Cheese Scones deliver a bold umami profile and perfect texture while celebrating rich flavors without gluten. Made with aged sharp cheddar and grass-fed butter, they are quick to prepare and elevate any meal.

2 cups Gluten-Free All-Purpose Flour
1/2 cup Grass-Fed Butter
1 cup Aged Sharp Cheddar, grated
1 tablespoon Baking Powder
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1 teaspoon Mustard Powder
1 Organic Egg
3/4 cup Almond Milk
1 teaspoon Honey or Maple Syrup


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper
  2. In a large bowl, whisk together the gluten-free flour, baking powder, sea salt, black pepper, and mustard powder
  3. Grate the ice-cold grass-fed butter into the flour mixture or cut it into small cubes, then mix until it resembles coarse crumbs
  4. Gently fold in the grated sharp cheddar until evenly distributed
  5. In a separate bowl, beat the egg with the almond milk and honey or maple syrup
  6. Combine the wet and dry ingredients, mixing until a shaggy dough forms without overworking it
  7. Lightly dust a surface with gluten-free flour, turn out the dough, and pat it into a circle about 1 inch thick. Cut into 8 wedges
  8. Place the wedges on the baking sheet and brush the tops with extra milk or an egg wash
  9. Bake for 18-22 minutes until golden brown on top and firm to the touch
  10. Allow the scones to cool on a wire rack for 5 minutes before serving

Notes

For a dairy-free version, substitute the grass-fed butter with chilled coconut oil or a high-quality vegan butter and use vegan cheese.
