Ingredients
2 cups Gluten-Free All-Purpose Flour
1/2 cup Grass-Fed Butter
1 cup Aged Sharp Cheddar, grated
1 tablespoon Baking Powder
1 teaspoon Sea Salt
1/2 teaspoon Black Pepper
1 teaspoon Mustard Powder
1 Organic Egg
3/4 cup Almond Milk
1 teaspoon Honey or Maple Syrup
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper
- In a large bowl, whisk together the gluten-free flour, baking powder, sea salt, black pepper, and mustard powder
- Grate the ice-cold grass-fed butter into the flour mixture or cut it into small cubes, then mix until it resembles coarse crumbs
- Gently fold in the grated sharp cheddar until evenly distributed
- In a separate bowl, beat the egg with the almond milk and honey or maple syrup
- Combine the wet and dry ingredients, mixing until a shaggy dough forms without overworking it
- Lightly dust a surface with gluten-free flour, turn out the dough, and pat it into a circle about 1 inch thick. Cut into 8 wedges
- Place the wedges on the baking sheet and brush the tops with extra milk or an egg wash
- Bake for 18-22 minutes until golden brown on top and firm to the touch
- Allow the scones to cool on a wire rack for 5 minutes before serving

For a dairy-free version, substitute the grass-fed butter with chilled coconut oil or a high-quality vegan butter and use vegan cheese.
