Ingredients
1 large head Cauliflower
2 tablespoons Avocado Oil
1 cup Sharp Cheddar Cheese
1/2 cup Shredded Parmesa
1 teaspoon Garlic Powder
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper
Optional: Fresh Parsley
Instructions
- Preheat your oven to 425°F (218°C). Wash and pat the cauliflower dry, then chop it into bite-sized florets
- Place the florets on a large rimmed baking sheet. Drizzle with avocado oil and sprinkle with sea salt, black pepper, and garlic powder. Toss to coat and spread out
- Roast for 15 to 20 minutes until golden brown and fork-tender
- Remove from the oven and top with shredded cheddar and parmesan cheese
- Switch to the 'Broil' setting and broil for 2 to 3 minutes until the cheese is bubbly and browned
- Let it rest for 2 minutes, garnish with parsley if desired, and serve hot
