Description

This Gluten Free Cheesy Potato Casserole is the ultimate comfort food, featuring layers of tender potatoes smothered in a rich, velvety cheese sauce that bubbles to golden perfection. It's simple to prepare, yet feels like a special treat every single time.


Ingredients

2 lbs Yukon Gold Potatoes
2 cups Sharp Cheddar Cheese, grated
1 cup Greek Yogurt
2 tbsp Olive Oil
1 Yellow Onion, diced
2 cloves Fresh Garlic, minced
2 tbsp Gluten-Free Flour Blend
1 cup Unsweetened Almond Milk
Sea Salt, to taste
Cracked Black Pepper, to taste
Fresh Chives or Parsley, for garnish


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish
  2. Peel and dice the potatoes into uniform half-inch cubes and soak in cold water
  3. In a skillet, heat Olive Oil and sauté the onions until translucent. Add garlic and cook until fragrant
  4. Sprinkle in the gluten-free flour and stir, then slowly whisk in the milk until smooth
  5. Remove from heat, fold in cheddar and Greek yogurt until melted and combined
  6. Drain and dry the potatoes, then toss them in the cheese sauce. Season with salt and pepper
  7. Pour mixture into the baking dish, spread evenly, and top with remaining cheese. Cover with foil and bake for 40 minutes
  8. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brow
  9. Let rest for 10 minutes before serving and garnish with fresh chives

Notes

For a dairy-free version, substitute cheddar with vegan cheese and use coconut milk.

You can prepare the casserole a day in advance and refrigerate before baking.
