Ingredients
2 lbs Yukon Gold Potatoes
2 cups Sharp Cheddar Cheese, grated
1 cup Greek Yogurt
2 tbsp Olive Oil
1 Yellow Onion, diced
2 cloves Fresh Garlic, minced
2 tbsp Gluten-Free Flour Blend
1 cup Unsweetened Almond Milk
Sea Salt, to taste
Cracked Black Pepper, to taste
Fresh Chives or Parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish
- Peel and dice the potatoes into uniform half-inch cubes and soak in cold water
- In a skillet, heat Olive Oil and sauté the onions until translucent. Add garlic and cook until fragrant
- Sprinkle in the gluten-free flour and stir, then slowly whisk in the milk until smooth
- Remove from heat, fold in cheddar and Greek yogurt until melted and combined
- Drain and dry the potatoes, then toss them in the cheese sauce. Season with salt and pepper
- Pour mixture into the baking dish, spread evenly, and top with remaining cheese. Cover with foil and bake for 40 minutes
- Remove foil and bake for an additional 15-20 minutes until bubbly and golden brow
- Let rest for 10 minutes before serving and garnish with fresh chives
Notes
For a dairy-free version, substitute cheddar with vegan cheese and use coconut milk.
You can prepare the casserole a day in advance and refrigerate before baking.
