Ingredients

3 1/2 cups Gluten-Free All-Purpose Flour (with Xanthan Gum)
2 tablespoons Psyllium Husk Powder
1 packet Active Dry Yeast (approx. 2 1/4 tsp)
1 1/2 cups Warm Water
1 tablespoon Raw Honey
1 1/2 teaspoons Sea Salt
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Apple Cider Vinegar
2 Large Egg Whites (or 3 tablespoons Aquafaba for Vegan)


Instructions

  1. In a small bowl, combine the warm water (110°F), Honey, and active dry yeast. Stir gently and let it sit for about 5 to 10 minutes until a thick foam forms on the surface
  2. In a separate small bowl, whisk the psyllium husk powder with half a cup of warm water. Let it sit for 5 minutes until it forms a gel-like consistency
  3. In a large stand mixer bowl, whisk together the gluten-free flour blend and sea salt. Ensure there are no lumps
  4. Add the yeast mixture, psyllium gel, Olive Oil, apple cider vinegar, and egg whites to the dry ingredients. Use the paddle attachment on medium speed for about 4-5 minutes
  5. Lightly oil a large bowl with Olive Oil. Place the dough inside, cover with a damp cloth, and let it rise in a warm, draft-free spot for 60 to 90 minutes
  6. Gently turn the dough onto a surface lightly dusted with gluten-free flour, divide the dough into two equal portions, and roll each piece into a long, cylindrical log
  7. Cover the shaped loaves loosely and let them rise again for another 30-45 minutes
  8. Preheat your oven to 425°F (220°C) and place an empty metal tray on the bottom rack
  9. Score the top of each baguette and pour a cup of hot water into the empty tray on the bottom rack. Bake for 25-30 minutes until golden brow
  10. Remove from the oven and let them cool completely on a wire rack before slicing

Notes

Use a spray bottle to mist the inside of the oven with water during the first 15 minutes of baking to achieve a better crust.
