Description

This Gluten-Free Peach Cobbler with Coconut Sugar delivers the bubbling, jammy sweetness of summer peaches paired with a crisp, biscuit-like topping that satisfies any craving. It avoids refined sugars and inflammatory oils entirely, focusing on efficiency and nutrient density. Perfect for a busy weeknight, this recipe provides a reliable, crowd-pleasing dessert that aligns with dietary goals.

Ingredients

Scale

56 Large Peaches Fresh Sliced (or frozen)
1/2 cup Coconut Sugar (divided)
1.5 cup Gluten-Free All-Purpose Blend or Almond Flour
1/2 cup Melted Coconut Oil or Grass-fed Butter
1 tablespoon Baking Powder
1 teaspoon Ground Cinnamo
1/2 cup Unsweetened Almond Milk
1 teaspoon Vanilla Extract

Instructions

  1. Preheat and Prep: Set your oven to 375°F (190°C). Grease a 9×9 inch baking dish with a small amount of coconut oil
  2. Prepare the Peach Base: Toss your sliced peaches directly in the baking dish with 2 tablespoons of coconut sugar, a splash of lemon juice, and half of the cinnamon. Spread them in an even layer
  3. Mix the Topping: In a medium bowl, combine the gluten-free flour, the remaining coconut sugar, baking powder, and the rest of the cinnamon. Stir well to remove any clumps
  4. Combine Wet and Dry: Pour the melted coconut oil, almond milk, and vanilla extract into the dry mixture. Stir until a thick dough forms. Do not overmix; a few lumps are fine
  5. Assemble: Drop spoonfuls of the dough over the peaches, allowing gaps for steam to escape
  6. Bake: Place the dish in the oven and bake for 35 to 40 minutes until the topping is golden brown and peach juices are bubbling
  7. Cool: Let the cobbler rest for at least 10 minutes before serving

Notes

If using frozen peaches, do not thaw. Increase baking time by 5 minutes.

For a vegan option, use coconut oil and plant-based milk.
