Ingredients

1 pound Fresh Spinach
2 tablespoons Extra Virgin Olive Oil
1 large Yellow Onio
3 large Garlic Cloves
1 medium Yukon Gold Potato
4 cups Vegetable or Chicken Broth
1/2 cup Full-Fat Coconut Milk
1 tablespoon Fresh Lemon Juice
1/4 teaspoon Nutmeg
Sea Salt & Black Pepper to taste
Instructions
- Sauté the onions in olive oil until translucent
- Add minced garlic and cubed potato; stir for 2 minutes
- Pour in the broth and bring to a boil, then reduce to a simmer for 10-12 minutes
- Add fresh spinach and stir until wilted, about 2-3 minutes
- Blend the soup until smooth
- Stir in coconut milk, nutmeg, and lemon juice; adjust seasoning
Notes
For creaminess, consider adding half an avocado during blending.
