Instructions
- Scrub the Yukon Gold potatoes thoroughly under cold water. Leave the skins on and slice into uniform rounds, approximately 1/4 inch thick
- Preheat your oven to 400°F (200°C) and line a large baking sheet with unbleached parchment paper
- Toss the sliced potatoes with extra virgin olive oil, chopped rosemary, garlic powder, sea salt, and black pepper in a large mixing bowl
- Arrange the seasoned rounds on the prepared baking sheet in a single layer. Bake for 15 minutes, then flip each round and bake for another 10 to 15 minutes until fork-tender and golde
- Remove from the oven and let rest for three minutes before serving warm
