Ingredients
1 cup Thick Greek Yogurt
1.5 cups Coconut Flour
3 tablespoons Pure Honey
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Ground Cinnamo
1/4 cup Melted Coconut Oil
Optional Toppings: Crushed nuts, shredded coconut, cocoa powder
Instructions
- In a large mixing bowl, combine the thick Greek yogurt, pure honey, and vanilla extract. Whisk until smooth
- Gradually fold in the coconut flour and ground cinnamon until a thick dough-like consistency forms
- Pour in the melted coconut oil and stir well to combine
- Chill the mixture in the refrigerator for 20 to 30 minutes
- Use a small cookie scoop or tablespoon to portion out the dough and roll into balls about one inch in diameter
- Roll the balls in optional toppings if desired while they are still tacky
- Refrigerate the formed balls on a parchment-lined tray for another 15 minutes before serving
Notes
If the dough is too soft, add more coconut flour. If too crumbly, add a bit more yogurt.
Store in an airtight container in the refrigerator for up to 5-6 days or freeze for up to 3 months.
