Ingredients

1/2 cup Plain Greek Yogurt
1/2 cup Pure Maple Syrup
1/4 cup Avocado Oil
2 Large Eggs
1 teaspoon Pure Vanilla Extract
1.5 cups White Whole Wheat Flour
1 teaspoon Baking Soda
1.5 teaspoons Ground Cinnamo
1/2 teaspoon Sea Salt


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin ti
  2. Grate the zucchini and remove excess moisture
  3. Whisk together Greek yogurt, maple syrup, avocado oil, eggs, and vanilla
  4. Sift together flour, baking soda, cinnamon, and salt
  5. Fold dry ingredients into the wet mixture gently
  6. Incorporate the zucchini into the batter
  7. Divide the batter into the muffin tin and bake for 18-22 minutes
  8. Cool the muffins for 5 minutes in the tin, then transfer to a cooling rack
