Description

This Green Goddess Chicken Salad transforms a classic deli staple into a vibrant, gourmet experience that bursts with herbaceous energy. It marries the richness of perfectly cooked poultry with a dressing that tastes like a garden in mid-summer, prioritizing flavor density and nutrient-rich ingredients.

1.5 lbs Chicken Breast (Roasted or Poached)
1 medium Ripe Avocado
1/2 cup Greek Yogurt (Plain, Full Fat)
1 cup packed Fresh Italian Parsley
1/4 cup chopped Fresh Chives
2 tbsp Fresh Tarrago
2 tbsp Fresh Lemon Juice
2 tbsp Extra Virgin Olive Oil
3 stalks Green Onions (Thinly sliced)
2 ribs Celery (Finely diced)
Sea Salt & Black Pepper to taste
1 tsp Raw Honey (Optional)


Instructions

  1. Season your chicken breasts with sea salt and black pepper. Roast them in the oven at 400°F (200°C) until the internal temperature reaches 165°F. Let the meat rest for 10 minutes before dicing it into bite-sized cubes
  2. In a high-speed blender or food processor, combine the ripe avocado, Greek yogurt, lemon juice, extra virgin olive oil, and optional raw honey. Pulse until the mixture is smooth and pale gree
  3. Add the fresh parsley, chives, and tarragon to the blender. Pulse a few more times until the herbs are finely chopped but not completely pulverized
  4. Place the diced chicken, celery, and green onions into a large mixing bowl. Pour the dressing over the top
  5. Using a spatula, gently fold the dressing into the chicken until every piece is thoroughly coated. Taste and adjust seasoning if necessary
  6. Let the salad sit in the refrigerator for at least 30 minutes before serving

Notes

For a dairy-free version, substitute Greek yogurt with avocado oil mayonnaise or blended avocado.

To prevent browning, use lemon juice and cover the salad with plastic wrap before sealing.
