Description

The Healthy 7-Layer Taco Salad brings a vibrant burst of flavor to your table while providing essential nutrients your body craves for optimal function. Ingredients

1 lb Grass-fed Ground Beef or Ground Turkey
1.5 cups Organic Black Beans or Pinto Beans, rinsed
2 Ripe Avocados, mashed with lime and sea salt
1 cup Plain Greek Yogurt (Full fat or 2%)
2 cups Shredded Romaine Lettuce
1 cup Cherry Tomatoes
1/2 cup Red Onion, diced
1/4 cup Fresh Cilantro
1 tbsp Avocado Oil
Cumin, Chili Powder, Garlic Powder, Sea Salt to taste


Instructions

  1. Heat 1 tablespoon of Avocado Oil in a large skillet over medium heat. Add the ground beef or turkey. Cook until browned, breaking it apart with a spatula. Stir in the cumin, chili powder, garlic powder, and sea salt. Set aside to cool slightly
  2. Rinse the organic beans thoroughly. In a small bowl, lightly mash half of the beans to create a thicker texture, then mix them back with the whole beans. Spread this bean layer in a glass serving dish or individual containers
  3. Spread the seasoned protein evenly over the bean layer
  4. Mash the ripe avocados with lime juice and sea salt, then spread this creamy layer over the meat
  5. Layer the Greek yogurt over the guacamole
  6. Add a generous layer of diced tomatoes and red onions
  7. Top with shredded romaine lettuce and fresh cilantro
  8. Chill in the refrigerator for about 20 minutes before serving

Notes

To keep the avocado from turning brown, use fresh lime juice and ensure the yogurt layer covers the avocado layer.
