Ingredients
2 large pieces Chicken Breast
2 medium Ripe Avocados
1/4 cup Red Onio
1/2 bunch Fresh Cilantro
2 tablespoons Lime Juice
1 tablespoon Extra Virgin Olive Oil
1 teaspoon Garlic Powder
Sea Salt & Black Pepper to taste
Instructions
- Season chicken breasts with sea salt, black pepper, and garlic powder. Heat a skillet over medium heat with a tablespoon of olive oil. Sear chicken until golden brown and cooked through (6-7 minutes per side). Set aside to rest, then dice into bite-sized cubes
- In a large mixing bowl, scoop out the flesh of the ripe avocados and mash them with a fork to desired consistency
- Add freshly squeezed lime juice to the mashed avocado, then stir in diced red onion and chopped cilantro
- Gently fold in the diced chicken into the avocado mixture until all pieces are coated
- Taste and adjust seasoning with more salt or lime if needed. Serve immediately
