Ingredients
1.5 cups Oat Flour or Almond Flour
1.5 teaspoons Baking Powder
1/4 teaspoon Sea Salt
1/2 cup Pure Maple Syrup
1/4 cup Melted Coconut Oil
1/3 cup Plain Greek Yogurt
1 Large Egg (Room Temp)
1 teaspoon Vanilla Extract
1 cup Fresh Blueberries
1 tablespoon Lemon Zest
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a non-stick donut pa
- In a mixing bowl, whisk together the oat flour, baking powder, and sea salt
- In another bowl, mix the egg, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract until well combined
- Fold the dry ingredients into the wet ingredients gently until just combined
- Carefully fold in the fresh blueberries and lemon zest
- Transfer the batter to a piping bag and fill the donut molds about 3/4 full
- Bake for 12-15 minutes until golden brown and a toothpick comes out clea
- Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack

If using frozen blueberries, add them directly to the batter without thawing.
