These Healthy Baked Broccoli Cheese Balls are a delicious snack that disguises broccoli in a cheesy, golden package, perfect for busy weeknights and kid-friendly meals.
Ingredients
2 cups Fresh Broccoli Florets
1 cup Sharp Cheddar Cheese
1/2 cup Whole Wheat Breadcrumbs
2 Large Eggs
1/4 cup Finely Diced Onio
1 tablespoon Extra Virgin Olive Oil
1 teaspoon Garlic Powder
1/2 teaspoon Sea Salt
1/2 teaspoon Black Pepper
Instructions
- Steam the broccoli florets until tender, then chop finely
- In a bowl, mix chopped broccoli, cheddar cheese, breadcrumbs, diced onion, garlic powder, salt, and pepper
- Whisk the eggs and add to the mixture along with olive oil, mixing until sticky
- Preheat the oven to 400°F (200°C) and shape the mixture into golf ball-sized balls
- Bake for 18 to 20 minutes, flipping halfway through, until golden brow
- Let them cool slightly before serving
Notes
For gluten-free, substitute breadcrumbs with almond flour.
To make vegan, use flax eggs and vegan cheese.
