Description

These Healthy Baked Broccoli Cheese Balls are a delicious snack that disguises broccoli in a cheesy, golden package, perfect for busy weeknights and kid-friendly meals.


Ingredients

2 cups Fresh Broccoli Florets
1 cup Sharp Cheddar Cheese
1/2 cup Whole Wheat Breadcrumbs
2 Large Eggs
1/4 cup Finely Diced Onio
1 tablespoon Extra Virgin Olive Oil
1 teaspoon Garlic Powder
1/2 teaspoon Sea Salt
1/2 teaspoon Black Pepper


Instructions

  1. Steam the broccoli florets until tender, then chop finely
  2. In a bowl, mix chopped broccoli, cheddar cheese, breadcrumbs, diced onion, garlic powder, salt, and pepper
  3. Whisk the eggs and add to the mixture along with olive oil, mixing until sticky
  4. Preheat the oven to 400°F (200°C) and shape the mixture into golf ball-sized balls
  5. Bake for 18 to 20 minutes, flipping halfway through, until golden brow
  6. Let them cool slightly before serving

Notes

For gluten-free, substitute breadcrumbs with almond flour.

To make vegan, use flax eggs and vegan cheese.
