3 Large Organic Eggs

1/2 cup Almond Flour or Oat Flour
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper
1 tablespoon Extra Virgin Olive Oil (for greasing)


Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin with Olive Oil or Avocado Oil
  2. Steam the finely chopped broccoli florets for about 3 minutes until they are bright green and slightly tender. Drain and pat dry
  3. In a large mixing bowl, whisk the organic eggs until frothy
  4. Stir in the steamed broccoli, shredded cheddar cheese, almond flour, garlic powder, onion powder, sea salt, and black pepper until thoroughly mixed
  5. Fill the muffin cups with the mixture, packing it tightly, and bake for 18 to 22 minutes until golden brow
  6. Let the cups cool in the tin for at least 5 minutes before removing

Notes

To make vegan, replace eggs with flax eggs and use plant-based cheese.

Chop broccoli finely for better texture and hold.
