Description

Healthy BLT Egg Salad Lettuce Wraps provide the ultimate solution for a quick, high-protein meal that satisfies your cravings for something crunchy, creamy, and savory. This recipe strips away the unnecessary carbs of a traditional sandwich, replacing bread with crisp lettuce leaves for a refreshing finish. You get the classic flavors of smoky bacon, juicy tomatoes, and rich eggs in every single bite. Efficient and delicious.

Ingredients

Scale

6 large Pasture-Raised Eggs
46 strips Sugar-Free Baco
1/3 cup Avocado Oil Mayonnaise
1/2 cup Cherry Tomatoes
2 tbsp Fresh Chives or Green Onions
1 head Butter Lettuce or Romaine
Sea Salt and Black Pepper to taste
1 tsp Dijon Mustard (optional)

Instructions

  1. Cook the bacon until crispy, about 8-10 minutes in an air fryer at 400°F
  2. Peel and dice the hard-boiled eggs into uniform cubes
  3. In a bowl, mix the avocado oil mayo, Dijon mustard, sea salt, and black pepper until smooth
  4. Fold the diced eggs, quartered tomatoes, and crumbled bacon into the mayo mixture
  5. Lay out lettuce leaves and spoon the egg salad into the center of each leaf
  6. Garnish with extra black pepper or chives and serve immediately

Notes

Store the egg salad mixture in an airtight container in the fridge for up to 3 days; do not assemble wraps until ready to eat.
