Ingredients
6 large Pasture-Raised Eggs
4–6 strips Sugar-Free Baco
1/3 cup Avocado Oil Mayonnaise
1/2 cup Cherry Tomatoes
2 tbsp Fresh Chives or Green Onions
1 head Butter Lettuce or Romaine
Sea Salt and Black Pepper to taste
1 tsp Dijon Mustard (optional)
Instructions
- Cook the bacon until crispy, about 8-10 minutes in an air fryer at 400°F
- Peel and dice the hard-boiled eggs into uniform cubes
- In a bowl, mix the avocado oil mayo, Dijon mustard, sea salt, and black pepper until smooth
