Ingredients
2 cups Old Fashioned Rolled Oats
1 tsp Baking Powder
1/2 tsp Sea Salt
1 tsp Ground Cinnamo
1/4 tsp Nutmeg
1 tbsp Pure Vanilla Extract
2 cups Unsweetened Almond Milk
1 Large Egg
3 tbsp Melted Coconut Oil
1/3 cup Pure Maple Syrup
1.5 cups Fresh or Frozen Blueberries
1 tsp Lemon Zest
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 2-quart baking dish with coconut oil
- In a large mixing bowl, whisk together rolled oats, baking powder, cinnamon, nutmeg, and sea salt
- In a separate bowl, whisk together the almond milk, egg, maple syrup, melted coconut oil, and vanilla extract until well combined
- Spread half of the blueberries in the bottom of the prepared baking dish
- Pour the dry oat mixture over the blueberries, then pour the wet mixture over the oats, gently nudging the oats to ensure they are submerged
- Sprinkle the remaining blueberries and lemon zest on top
- Bake for 35 to 40 minutes until the edges are golden brown and the center is set but slightly jiggles
Notes
For a vegan option, replace the egg with a flax egg (1 tbsp flax meal mixed with 3 tbsp water).
