Ingredients

2 cups Old Fashioned Rolled Oats
1 tsp Baking Powder
1/2 tsp Sea Salt
1 tsp Ground Cinnamo
1/4 tsp Nutmeg
1 tbsp Pure Vanilla Extract
2 cups Unsweetened Almond Milk
1 Large Egg
3 tbsp Melted Coconut Oil
1/3 cup Pure Maple Syrup
1.5 cups Fresh or Frozen Blueberries
1 tsp Lemon Zest


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 2-quart baking dish with coconut oil
  2. In a large mixing bowl, whisk together rolled oats, baking powder, cinnamon, nutmeg, and sea salt
  3. In a separate bowl, whisk together the almond milk, egg, maple syrup, melted coconut oil, and vanilla extract until well combined
  4. Spread half of the blueberries in the bottom of the prepared baking dish
  5. Pour the dry oat mixture over the blueberries, then pour the wet mixture over the oats, gently nudging the oats to ensure they are submerged
  6. Sprinkle the remaining blueberries and lemon zest on top
  7. Bake for 35 to 40 minutes until the edges are golden brown and the center is set but slightly jiggles

Notes

For a vegan option, replace the egg with a flax egg (1 tbsp flax meal mixed with 3 tbsp water).

Store leftovers in an airtight container in the refrigerator for up to five days or freeze for up to three months.
