Ingredients
3 Medium Ripe Bananas
1.5 Cups Fresh or Frozen Blueberries
1/2 Cup Pure Maple Syrup
1/3 Cup Avocado Oil
2 Large Eggs
1 Teaspoon Pure Vanilla Extract
1 3/4 Cups Whole Wheat Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Ground Cinnamo
1/4 Teaspoon Sea Salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pa
- Mash the ripe bananas in a large bowl until mostly smooth
- Whisk the avocado oil, maple syrup, eggs, and vanilla extract into the mashed bananas
- In a separate bowl, mix the flour, baking soda, cinnamon, and salt
- Fold the dry ingredients into the wet ingredients until just combined
- Gently fold in the blueberries
- Pour the batter into the prepared loaf pan and smooth the top
- Bake for 55 to 65 minutes until a toothpick comes out clea
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack
Notes
Use the ripest bananas with plenty of brown spots for the best flavor.
Toss frozen blueberries in a little flour to prevent sinking in the batter.
