Description

3 Medium Ripe Bananas
1.5 Cups Fresh or Frozen Blueberries
1/2 Cup Pure Maple Syrup
1/3 Cup Avocado Oil
2 Large Eggs
1 Teaspoon Pure Vanilla Extract
1 3/4 Cups Whole Wheat Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Ground Cinnamo
1/4 Teaspoon Sea Salt


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pa
  2. Mash the ripe bananas in a large bowl until mostly smooth
  3. Whisk the avocado oil, maple syrup, eggs, and vanilla extract into the mashed bananas
  4. In a separate bowl, mix the flour, baking soda, cinnamon, and salt
  5. Fold the dry ingredients into the wet ingredients until just combined
  6. Gently fold in the blueberries
  7. Pour the batter into the prepared loaf pan and smooth the top
  8. Bake for 55 to 65 minutes until a toothpick comes out clea
  9. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack

Notes

Use the ripest bananas with plenty of brown spots for the best flavor.

Toss frozen blueberries in a little flour to prevent sinking in the batter.
