1 tablespoon Balsamic Vinegar
1 teaspoon Raw Honey or Maple Syrup
Sea Salt and Black Pepper to Taste
Instructions
- Wash the spinach and blueberries thoroughly. Pat them dry with a clean towel
- Slice the peaches into thin wedges, leaving the skin on for extra fiber
- In a small glass jar, combine the Extra Virgin Olive Oil, balsamic vinegar, honey, salt, and pepper. Shake vigorously until emulsified
- Place the greens in a large serving bowl. Add the sliced peaches and blueberries on top
- Sprinkle the crumbled feta and raw nuts over the fruit
- Drizzle the dressing over the salad just before serving. Toss gently to coat the leaves
Notes
Add a squeeze of lemon juice to sliced peaches before storage to prevent browning.
